Our organic olives were hand picked in St. Helena by the Taylor family in late November,
rushed to the local mill and immediately cold pressed using a traditional stone wheel.

This year’s Estate grown harvest is a Spanish blend of Arbequina, Manzanilla
and Sevillano olives.  
The flavor profile of our artisan oil is medium in style with lots of fresh fruit,
a pleasant bitterness and distinctive pungent finish.

The COOC (California Olive Oil Council) has certified our olio nuovo
PRINCE OLIVE OLIO as California “extra virgin”.
